Discover Serbia's culinary delights with Ustipci, a traditional specialty often served as a bread substitute or beer snack. These “biscuits” fried in oil are easy to prepare and are very popular in Serbia and Croatia.
Serbian cuisine is known for its hearty and tasty dishes, deeply rooted in the country's culture. One of these culinary specialties are ustipci, traditional savory “biscuits” fried in oil and generally prepared as a substitute for bread or snacks with beer.
The basic ingredients of ustipci are flour, water and salt. Depending on the recipe, a little oil, eggs or yogurt can also be added to improve the flavor and texture of the dough, and baking powder to make it fluffy. The dough is usually prepared by mixing all the ingredients well to avoid lumps and then forming balls with a spoon. The size of ustipci can vary, but the best (at least for us) are those formed with two teaspoons.
They are fried in oil until golden and crispy on the outside. Ready ustipci are usually removed from the oil and placed on paper towels to remove excess fat, but this may take a minute and then they can be consumed because that is when they become tastiest.
One particularly popular recipe comes from Serbian food blogger Gastrobrat, whose profile has over a million views. For 14 ustipci he used 2 eggs, 200 ml of yogurt, 1 tablespoon of sugar, 1 tablespoon of alcohol vinegar (which is not common in other recipes), a pinch of salt, half a packet of baking powder and 200 grams of flour.
Ustipci are an integral part of Serbian and Croatian cuisine and are very popular. They are a testament to the diversity and richness of Serbian cuisine and are a must for anyone who wants to try the authentic cuisine of this country.
